Sheet Pan Meal

 

I make sheet pan veggies and add to salads during the week. On the nights I am running in the door after a long day (most days) quick and easy meals are on the menu.  Sheet pan meals are a fast, easy way to cook your protein, veggies, and starch on one pan.

Preheated grill or in the oven at 350 degrees for approximately 30 mins (or til cooked through) depending on what is on it.

Pictured are sweet potato slices and mini carrots sprayed with olive oil and sprinkled with sea salt.  Trader Joe’s Gluten Free Chicken Breast Tenders are all cooked for dinner and/or a lunch for the next day!

While this is cooking, you can make a salad or prep lunches… and it’s DONE!

Other meal ideas, baby potatoes, sliced in half, zucchini and summer squash, and mini multi-colored peppers - cook on the sheet pan and add shrimp towards the end of cooking time — or grill shrimp on a skewer and prepare frozen, bagged cauliflower rice for a “Meal Bowl” Quinoa can be substituted for cauliflower rice and use for lunches!
