GLUTEN FREE BISCOTTI “BONES"

Spooky, scary Halloween Biscotti to make for your Halloween party this year or actually any time of year! These a a little spicy and have a crispy outer shell with a
chewy cookie with tender and moist crumbs. I love the unsuspecting flavors of the spices all wrapped up in a positively wonderful taste experience!!
Enjoy these morsels with coffee, mulled cider, or milk to dunk! You can eat them without dunking and they are very addictive!! 😍

Ingredients:
3 large egg whites, room temperature
1-1/2 cups granulated sugar
1 tsp. Ground cinnamon
1 tsp Grated lemon zest or dried lemon peel (found in baking aisle in store)
1/2 tsp. Baking powder
1/4 tsp. Ground nutmeg
1-3/4 cup gf Jules Gluten free All Purpose Flour
1-1/2 cups finely chopped raw almonds
Confectioner’s sugar to coat “Bones”
Instructions:
Preheat oven to 350 degrees
Prepare 2 baking sheets lined with parchment paper
Whip egg whites til foamy, not stiff. Add sugar, cinnamon, lemon zest (peel), baking powder, nutmeg and cloves. Beat til mixed well. Process almonds in chopper to fine texture. Add gfJules Gluten Free All Purpose Flour and chopped almonds and mix well into egg mixture.
Scoop approx 1-2 tablespoons of dough and form with hands into small 1/2 in wide, 3 in long shaped logs. Roll in confection’s sugar and press the ends with fingers to make a U on the ends to look like bones. Place on prepared pans 2 in. apart.
Bake for 20 minutes then transfer to wire rack to cool. Roll in confectioner’s sugar again to really coat them to look like bones.
Once cooled, serve or put in zip lock bags or tightly sealed containers to keep crisp.
This recipe can be use all year long and just don’t need to make them into bones. Just roll in logs and bake. Dip in powdered sugar or lightly drizzle with icing and maybe a swirl of melted chocolate or dip bottom of biscotti in chocolate and let set til dry on baking sheet covered in wax paper or parchment paper.
