Gluten-Free Crustless Spinach Pie

Eat your spinach… we were always told when I was younger. It’s good for you—Popeye always ate his spinach!… okay now I am dating myself…Anyway, it was hard for me to eat my spinach growing up.  My mom cooked it in corn oil (yes, corn oil) and large garlic cloves on the stove and it was a soupy combination of chunky garlic and greens with no taste as long as I didn’t bite into the chunks of garlic (sorry Mom).  I am a garlic lover now and I adore spinach in my salads with warm goat cheese and walnuts and cranberries… ohhhh I’m getting off track and onto another post.

Anyways, this spinach pie has been a favorite in our home for over 10…uhhh 20… uhh years now.  It’s what I call a “dump” meal.  Everything gets dumped in one bowl, mix and bake. Can’t get any easier than that… you can even use organic frozen spinach that has been defrosted to make it even easier!  You will not regret trying this recipe, it blends together wonderfully as it bakes. You can make it using different cheese combinations and spices, it lends wonderfully to whatever you have in the refrigerator at the end of the week….

What You Need:

  • 2 Packages of 12 to 16 oz of Trader Joe’s Fresh Organic Spinach (triple washed)

  • 3 Heaping Tbs of gluten-free flour (I use GF Jules)

  • 2 Tbs of Dried Minced Onion (hydrated in water)

  • 1/3 Cup of Trader Joe’s Shredded Mexican Cheese

  • 16 Oz of Low Fat Cottage Cheese - blended smooth

  • 3 Eggs

  • Seasonings (To Taste):

    • 1 Tsp of 21 Salute OR 1 to 1 1/2 Tsp of Adobo Light

    • 1 Tsp Salt (if not using Adobo)

    • 2 Tsp of Onion Power

    • 1 Tsp of Garlic Powder

Prepping Instructions:

Microwave spinach for 2 minutes to wilt

Mix all ingredients in one bowl. Spray a round casserole dish with olive oil.

Sprinkle an extra 1/4 cup of Mexican cheese on top

Cooking Instructions:

Bake at 350 degrees for 50-60 minutes until lightly browned on top and edges, and center is firm

Serves: 4

Note: Don’t let the cottage cheese scare you! My family would not be caught eating cottage cheese with a 20-foot pole - but they LOVE this dish!! You can also change out some ingredients / add some for a twist on the dish:

  • Use pizza cheese and add Italian seasonings

  • Use Feta Cheese along with pepper, oregano, and thyme
