Easy Gluten-Free Chicken Tender Parmesan
Crazy day on the run since the alarm went off at 5:00 am. One of those days that you “forget to eat” and realize on the way home while sitting in traffic, you are not only starving, but you need a quick meal to pull together to feed the family and have nothing ready. I am thinking warm, delicious Chicken Parmesan…but I don’t have time or energy to defrost chicken breasts, bread (and make breadcrumbs from scratch) and bake so we can have dinner before midnight. Trader Joe’s to the rescue! I love Trader Joe’s! They have so many different items and it’s fun to see what is new and can be put together quickly to feed a hungry family!
I had TJ’s frozen gluten-free chicken breast nuggets in the freezer and a homemade sauce left over from the weekend. (Always make a large batch to use or freeze for future meals!). TJ’s also has a large selection of sauces that can be used if you don’t happen to have homemade available. Cheese is always stocked in the frig as a staple and off to the races…or to the kitchen. Serve with a side salad or/and a side of gluten-free pasta (TJ’s has Gluten Free Egg Fettuccini in their refrigerated section)
I hope you have a TJ’s near you and if not, homemade chicken cutlets made in advance and frozen for times like this will work just as well.
My motto… always be prepared or at least have the ingredients in your kitchen to prepare on short notice!

What you will need:
A 9x9 or 8x8 square pan
Trader Joe’s Gluten Free Frozen Chicken Breast Nuggets (kept frozen)
Homemade tomato sauce - or your favorite store-bought (TJ’s has great tomato basil)
Shredded Parmesan and Mozzarella cheese
Trader Joe’s Gluten Free Egg Fettuccini (optional)
Cooking Instructions:
In a 9x9 or 8x8 square pan, layer the bottom of your pan with homemade sauce/TJ’s tomato basil sauce. Add your gluten-free frozen chicken nuggets to cover (1 package will fit the pan). Sprinkle with shredded Parmesan and mozzarella over the whole pan. Add a layer of sauce - covering the chicken. Place foil over the pan and put in a 400-degree oven for 25 mins. Take out remove foil and add more cheese. Bake for 5-10 mins more til cheese is melted.
Serve with a salad or side of Trader Joe’s gluten-free Egg Fettuccini (found In their refrigerated section).
